feat: Add eip-6963 support and refactor wallet connection logic

This PR adds support for EIP-6963 injected wallet detection by using the mipd library. It also refactors some logic to make the wallet connection flow a bit simpler.

Using the OKX wallet injected provider:

Biggest changes:

• Removes the hard-coded list of injected wallets in favor of using MIPD
• Combines persisted state variables walletType and walletConnectorType into a single, serializable variable connectedWallet with type WalletInfo.
• Similarly, selectedWalletType is now selectedWallet
• Simplifies some of our WalletConnect logic (ie only one way to connect to WC instead of two)
