Hmm this is an interesting proposition.

We could run eXist-db Docker on any supported version of Java which theoretically includes Java 11. The advice though for us at the moment is to recommend Java 8, so perhaps we should stick with that whilst that is the story?

@duncdrum, any thoughts?

I want to get the automatic build pipeline going in java 8 for starters. We would need to bump the base image for each stage simultaneously which works for 1 (alpine open) and 2 (this pr) but not for 3 (gcr).

Let's keep this open for now, so we have a branch for experimenting.

Looks like openjdk is no longer dependended on, so this is no longer needed.
