Use the correct version of eXist-db in the correct place #231

  1. Java code should be compiled against the minimum required eXist-db Java API version.
  2. Tests should be executed against the version of eXist-db required by the package.

We expect CI to fail on this PR. There is no release of eXist-db 6.1.0 yet, so there is no corresponding Docker image for eXist-db 6.1.0. Proceeding with the merge so that this version can be included in the release of eXist 6.1.0.
