Update Directus to 10.8.2, add S3 storage options

Changes:

Updates Directus image to 10.8.2 (latest as of this PR)
Makes admin password option (will be auto generated)
Adds configurable LOG_LEVELenv
Adds PUBLIC_URLenv
Adds configurable STORAGE_LOCATIONSenv (local or s3)
- If S3 is selected, adds related env variables
Makes redis optional
Fixes REDIS env name, was changed in a recent Directus update from CACHE_REDIS
Adds default CORS_ envs
