I doubt it's related to updating Homebridge NB; it's been working as before for me. Could you double-check that your home hub is connected to Homebridge? Maybe it failed to reconnect when Homebridge was restarted after the update of Homebridge NB. Also, make sure (in Eve) that Enabled has been set on the Doorbell service. I assume you're seeing a message in the Homebridge log, that Homebridge NB sets the Programmable Switch Event on the Doorbell service?
I seem to remember having seen an option somewhere in the Home app to enable notifications for the Doorbell service, but I cannot find it anymore. They overhauled HomeKit notifications in iOS 15, not sure if that's actually an improvement. Maybe you may need to set Critical Alerts and/or Time-Sensitive Notification under Settings|Notifications|Home. Maybe you need to enable notifications on the Lock Mechanism service (which is on the same accessory as the Doorbell service).
Check everything you mentioned .. I set up the opener integrated ring so we still hear, when someone is ringing. Maybe it is due to an nuki update of the opener and not because of the homebridge nb.

after updating to the newest Version I guess I have a problem regarding the opener.
It now always suppresses the (original) ring. May this problem be linked to the update?
And one request aside - is it possible to show the Ring as a Motion Sensor in HomeKit?
