• [x] Create a small app and create documentation with it

In this ticket I have done the following tasks:

• I created a new repo where I copied an official Spring RestDocs example project. https://github.com/ebi-gene-expression-group/restful-notes-spring-hateoas-demo
• Added Spring RestDocs API Spec plugin and configuration to it.
• I also modified the code as needed.
• Added additional part to its documentation how to generate and configure OpenAPI 2/3 and/or Postman Collections.
