In response to https://github.com/eclipse-simrel/.github/pull/20#issuecomment-2072424754, this PR fixes two wrong release dates in Simultaneous_Release.md.

If I'm not mistaken here, I created an ECA for my account/email address and the corresponding check should succeed if retriggered.
