Rename CRDs versions from vXbeta to v1betaX.
Only keep last two versions of each CRD and fix version names
This PR should bring all required prerequisites to implement a conversion hook for new CRD versions

I will extend the changelog on this PR with these changes, so we can keep the other PR open until i fixed the demos.
