chore(ci): add gradle wrapper validation

Description

This project uses a gradle wrapper to run different build tasks locally and in the CI. Since the wrapper uses a binary which could be compromised, we're adding a check to all CI tasks where the Gradle wrapper is used, to ensure that the used binary is valid and safe.
