Align our k8s clusters onto 1.27 #319

We need to start the next upgrade of our k8s clusters (besides stable)

Upgrade your AKS cluster to a supported Kubernetes version You’re receiving this notice because you currently use Azure Kubernetes Service (AKS). Azure Kubernetes Service is retiring v1.25.x on 2 January 2024. We’ve detected that one or more AKS clusters in your subscription(s) are using Kubernetes v1.25 or lower. To stay within supported versions and service-level agreements (SLA) you have up to 30 days after the version is removed to upgrade. To avoid ever falling out of support and to keep up with Kubernetes versions we recommend turning on auto-upgrade. Required action Please upgrade your clusters to 1.25 or higher by 2 January 2024. • To keep up to date with all AKS releases, subscribe the AKS Releases page. • To know when the next versions will be introduced or retired check the Kubernetes release calendar for AKS.

Shouldn't we also upgrade stable if 1.25.x will retire on 2 January 2024?

@almadigabor good point, guess depends on alignment to communication for stable i guess...

@almadigabor urgh its already out of support version, good catch. We should do that soon / as soon as AKS deprecates it latest when we do the next release and the current will move onto stable

So maybe here we should align with release management and find a window when stable can be upgraded. Probably before the deployment starts for release 23.12 components.
