[Connector Kit] Release Checks

This issue tracks all relevant release checks for KITs.

Release Info

There's a structural overhaul of the Connector Kit. It now links to a lot of outside resources in the tractusx-edc and eclipse-edc documentations. The Management API walkthrough was moved into the tractusx-edc documentation.

Further, we could not find any information about the following artifacts. They are not mandatory for KITs in the network service area. However, you checked them in this ticket. Should we uncheck them?
