I would recommend to use two different icons to indicate if sorting is enabled or disabled.

Good point. Done. https://github.com/eclipse/capella/blob/409a90c4a2ed6c9c355badee0d068c32ec47f195/core/plugins/org.polarsys.capella.core.ui.resources/icons/full/obj16/capella_sort_disabled.gif is the source for the second grey scaled icon.
