[ECO-2229] Fix the websocket client incoming event logic by using proper `immer` functionality

Description

• [x] Fix the WebSocket client incoming event logic by using proper immerfunctions
• [x] Add unit test/function for extract filter function to simplify pushing aggregate events logic
• [x] Combine WebSocketClientStoreinto EventStore

Testing

Manual testing, although some simple unit tests were added for function logic.

Ideally we'd add unit tests for this, but for now we just want to get it working. It's possibly within the scope of this PR to add unit tests for this- it would definitely be nice to have.
