[ECO-2235] Fix config files & linter, add various unit tests #278

Description

[x] Update linter configs and versions
[x] Ensure lints and formats pass
[x] Ensure tests pass after updating types
[x] Remove unused code, refactor various types to not use namespaces
[x] Fix the rewards event name
[x] Add unit tests for parsing to ensure that the refactor didn't break the SDK functionality
[x] Add time for the processor healthcheck, because it takes longer to boot up now since the migrations are more complex.

Testing

Several unit tests for the now-refactored parsing logic. These were long overdue and ensure that the parsing logic is sound and doesn't break with more type changes/refactors.
