Cross validate #6

More stuff in different areas than I really should do, but main thing was to create a dataset prepped for cross validation and to generalize the modeling functions to run. Some more text and explanations elsewhere.

Everything's in the tidymodel framework.

As an update, I'm currently working on this. So that I don't hit @wdoyle42 with a bunch of changes, I'm just making them myself. I think this means I'll end up rejecting the pull request and then making a new one.
