Add simple steps for running it with docker-compose

This needs to be re-evaluated later because right now an Edgehog installation based on docker-compose would not be fully functional since:

The user would need an existing Astarte instance, and a docker-compose instance would not work since it uses non-standard URLs
All functionality based on triggers would not work since an external Astarte would not be able to reach a local Edgehog deployment

I opened an issue on Astarte regarding the possibility to have a single standard endpoint to query Astarte APIs even on a docker-compose environment: https://github.com/astarte-platform/astarte/issues/761

Barging in just to add that now it is possible to use a local Astarte instance exposed on standard URLs, since https://github.com/astarte-platform/astarte/pull/768 has been merged
