helm: use Cilium chart from fork

Context

Historically we had mostly code changes in our Cilium fork, so we could still use the upstream Helm chart and just swap the images. However, we keep accumulating changes to the Helm chart, which are cumbersome to keep track of in a patch file.

Proposed change(s)

Consume Helm chart directly from our Cilium fork.
Drop modifications that are already patched in the fork.

The only real diff in this PR is the image in daemonset.yaml, which was hardcoded before but is now populated by Helm.
