coordinator: export grpc prometheus metrics #460

The coordinator now exposes basic Prometheus metrics about gRPC connections from the UserAPI and the MeshAPI. The metrics are exposed via an HTTP server on port 9102 and can be accessed under the /metrics endpoint.

This needs to documented somewhere in the docs (not sure where tbh).

Edit: Constellation does this in Architecture/Observability.
