I've tried to reproduce this on several systems here without success.
Could you try installing the build from
http://dl.google.com/gears/current/gears-osx-opt.dmg and seeing if this still
happens.
Please make sure that you delete ~/Library/Internet Plugins/Gears.plugin if
that file
exists on your system.
Do you see the "Google Gears Settings..." item in the Safari menu?

I removed the svn build that I compiled myself, and installed the build that
you pointed me to, and I still have
the same issue.
The Google Gears Settings does indeed exist, and offline docs works, its just
the logo thats missing.

Could you try the following steps:
* Select Safari->Empty Cache and restart Safari.
* Open docs.
This shouldn't have any effect, but I just want to make sure.
Then:
* Close Safari.
* Move aside (don't delete) the '~/Library/Application Support/Google/Google
Gears
for Safari' folder.
* Reopen Safari and resync docs.
If the latter fixes the problem then we may need to take a look at the contents
of
the old Gears data folder.

I just now followed those instructions explicitly, and had the same result --
no logo. To be clear, the logo is
*not* missing on the main docs page (list of documents), only on individual
documents.

Hmm... OK, one more tests:
* Open Safari while offline, navigate to docs.google.com.
* Then open a new window and navigate to
http://docs.google.com/images/editor_docsslogo.gif
Do you see the docs logo?
