Google authentication is nowadays with Oauth2. That is not offered by simpleSAMLphp package. This would need implementing authentication module that uses the generic Oauth implementation.
Follow the procedure how Oauth implementation is used in https://github.com/educloudalliance/educloud-sso/tree/master/modules/authtwitter module
