What has been done

Included support for PostgreSQL (did not work before)
Include example docker compose files for three database systems, namely:
- pdo_mysql (MySQL)
- docker compose -f docker-compose-mysql.yml up
- pdo_pgsql (PostgreSQL)
- docker compose -f docker-compose-postgres.yml up
- pdo_sqlite (SQLite)
- docker compose -f docker-compose-sqlite.yml up
Several optimizations to support all three database systems

Todo

[ ] Additional testing to make sure all three db systems work as expected
[ ] Additional testing to make sure existing configurations do not break
[ ] Update included README
