updated to spacy v3 #3

Hi @egerber, Thank you for this very useful package. I did some changes to this package to make it work with spaCy v3

pipeline stage added by name (spacy v3 breaking change)
declared entry_point to shorten set-up (it is not necessary to import this package to use it)
changed directory name to match package name (makes it less confusing)

Hi Martino,

Awesome! I was to lazy to upgrade to the new spacy version, so your changes come very handy. I will probably create a new branch for this, so that both spacy v2 and spacy v3 are supported.
