Explicit Paper and Digital examples

With 1.3.0 we have introduced a expanded set of examples. The examples are provided to show the "golden standard" schema usage. Why? Because it helps guide implementors to walk on the path towards success.

One issue remaining is that the examples were not created with digital / paper certificates in mind.

Split the examples further into digital and paper variants, changing the contents so that they match the rules for each variant. At time of writing I believe this is a case of using the checksum in the certificate identifier, but please check the specifications carefully when working on this issue :-)

Minor differences - primarily in terms of display for UVCI, but there exist different schools of thought on even this point.

Luhn-Mod-N is really only for print so can be argued should not even be in the digital version
The URN:UVCI: prefix likewise adds nothing to a print version as it is intended for machine reading
- that said, there are plenty of apps nowadays (banking, for example) that scan paper for e.g. an IBAN number and enter it for you etc - so there is nothing stopping an app scanning the UVCI and processing it - for which the URN:UVCI: prefix would be needed, even on the paper version

Much wider ramifications than just adding a couple of test examples
