Bump `pyyaml` requirement to 6.0.1

Elasticsearch Curator 7.x fails to install (tested on Python 3.9 & 3.10) as the pyyaml requirement of 6.0.0 fails:

The same Error raises when running a standalone install of pyyaml==6.0 while 6.0.1 works without issues.

@NicolasDierick while a release is pending you can install curator using pip install git+https://github.com/elastic/curator@7.x. Works flawlessly for me in a virtualenv.

I will bump the version eventually. The pip install method is, indeed, preferred though.
