Fixes syntax errors, broken links, and updates based on the updated observability and security variables found while working on https://github.com/elastic/docs/pull/3096. (This will just make it easier to pull in more updates before merging https://github.com/elastic/docs/pull/3096.)

Hey @colleenmcginnis sorry I had a fix for the double Elastic buried in my other PR, apologies for merging that variable change too quickly 🙏
