Is your feature request related to a problem? Please describe.

OpenTelemtry instrumentations for LLMs are currently implemented by the openllmetry project (among others), if the instrumentation are fine with the upstream sdk and semconv we should find a way to integrate them easily.

This is more complicated than this and will be handled somewhere else, won't add dependencies on openllmetry though.
