Rename time series to metrics in code and documentation. #109338

The name time series data stream (TSDS) and time series index mode will be renamed to metrics data stream and metrics index mode in code and the documentation. This aligns better with the metrics es|ql command and the logs index mode.

Note that in the code the name time series will remain to be supported for BWC reasons.
