ES|QL: document date_period and time_duration data types #112592

Following the merge of https://github.com/elastic/elasticsearch/pull/109193 where we have a better story around these two data types, I think ES|QL documentation needs better coverage. We mention these data types here but so far there are no more details about them: how can they be used, what are their limitations, more examples.
