Document cluster.metadata.display_name usage for Stack Monitoring #87707

cluster.metadata.display_name can be set as a dynamic cluster setting to apply a custom name to the deployment name Stack Monitoring will display. This seems like a good setting to document because some users have multiple deployments across accounts with the same deployment name and when using CCS with monitoring, they will end up all appearing with the same name which is confusing. I have trouble finding reference to this setting in either Elasticsearch or Kibana documentation. Filing here because it is a cluster level setting in Elasticsearch.
