[EUI+] [EuiSkeleton] Fix issues with the component docs #8150

The purpose of this task is to fix issues in the EuiSkeleton component documentation.

Issues:

[ ] EuiSkeleton has various loading toggles that bounce around in height due to Docusaurus’s opinionated theme line-heights / margins (EuiSkeletonTitle and EuiSkeletonRectangle most notably),
[ ] EuiSkeletonLoading could also stand some tweaking to account for new demo width.
