Expand on elasticsearch.hosts in the docs and config #157825

Describe the feature: This has come from https://discuss.elastic.co/t/loadbalancing-config-in-kibana/333464/ and a lack of clarity in the docs, and that's also carried into the default config file

Describe a specific use case for the feature: It'd be good if we elaborated how listing multiple nodes work, ie does it load balance, is it for failover, or something else.
