Support `discriminator` #181994

See OpenAPI docs https://swagger.io/docs/specification/data-models/inheritance-and-polymorphism. This would be helpful with APIs that have a large number of possible request/response pairs that need to be mapped in some way.

This feature seems likely to be revisited in the next OAS release per https://github.com/OAI/sig-moonwalk/discussions/57
