[ObsUX] [Infra] Rename 'node' and 'asset' to 'entity' #191997

Summary

Within infra and metrics_data_access plugins we have places where the same thing is called node or asset, node was how things were called before and then asset came up, node was never renamed to asset, and asset was used when creating new components, hooks, etc

These different names, for the same thing, can lead to some errors and confusion. With the new initiative for the Entity Inventory coming soon, all the things will be called entity (hosts, containers, pods, services, etc)

We should invest some time to rename everything to entity for consistency.

Everything that has names containing 'node' or 'asset' are renamed to 'entity'
