Minor work to resync with Elasticsearch v8.11.0 that was released yesterday

cherry-picks build improvement from #88 that ensures the clean task properly removes artifacts built for a prior version
improves the download-ES task to properly support ELASTICSEARCH_TREEISH that are tags or commit shas
syncs with ES, including a mitigation of an API that was both deprecated and removed in the Elasticsearch 8.11 development cycle.

But I wonder if we need to keep the elasticsearch-java-client of our plugin same version. Maybe we can follow up with separate issue?
