Update EUI and most deps #27

Upgrade most of the dependencies to the latest versions, and optimize bundling of Highlight.js and Moment.

Note that I couldn't upgrade copy-webpack-plugin because it fails the build, both using webpack 4 and webpack 5 via next.config.js.
