[DOCS-6519] Deleted documentation source files that are no longer used. #155

This PR deletes the old documentation source files that are no longer used. Since the EC-Docker plugin is being migrated to the new PDK documentation automation, only the changelog.yaml and pluginspec.yaml files are required to generate the documentation.

Note This PR does not delete the following files or directories. If we should go ahead and delete them, please let me know, and I can add them to this PR.
