Grey colour profiles reduce 100% black to 95% #283

When I use our greyscale colour profiles Grey_Fogra39L.icc and Grey_Fogra52L.icc, text that is 100% black (cmyk(0,0,0,1)) becomes 95% in the output PDF. This doesn't seem right.

Might this have something to do with colour conversion in Prince addressed in https://github.com/electricbookworks/electric-book/pull/305?
