This will almost certainly be split into grid regions, BTW.
Having said that: if anyone has pointers to information on real-time production split up by source for any of the grid regions, or who to best contact, we would be very obliged!
Hey everybody, just found this new paper on carbon footprint of Chinese electricity transmission: https://sci-hub.tw/https://www.sciencedirect.com/science/article/abs/pii/S1364032119307191?via%3Dihub / https://www.sciencedirect.com/science/article/abs/pii/S1364032119307191?dgcid=rss_sd_all:
Highlights: • An Energy-Carbon Nexus Model (ECNM) from the Chinese perspective is developed. • Five Energy-Carbon emission factors of each province are first identified. • Provincial CO2 emission transfers are examined considering different power generation types. • Emission reduction simulations are performed to forecast provincial responsibility changes. • Policy suggestions for various provinces are proposed based on local realities.
Data from http://ceads.net/data/energy-inventory/, maybe live to find through authors of papers/database owners?

Unfortunately I'll have to close this as we don't have access to real-time data.
Just stumbled on this issue again, wondering if there would be any info yet. It seems, until now, not the case. Recently another paper - this time in Nature - was published on energy (transmission) infrastructure and embodied carbon, using IO tables, but again no reference to live energy generation data.
Something more relevant @martincollignon @corradio : Pete Tunbridge and Euan Graham from @ember-climate published a report on data transparency in Asia today (including China) with an assessment of time granularity, fuel/source breakdown, spatial breakdown, additional data (capacity, ...) and ease of access. Might be interesting for future developments...
maybe this could help. As it seems there are monthly data reports: https://english.cec.org.cn/#/datapublications

It would be great to get any real-time fuel or exchange information for any of the grid regions of China. Please let us know if you have any resources or contacts!
