Missing exchange configs between France, Jersey and Guernsey #7250

There is a connection between France and Jersey but it is missing from the map (Normandie 1, 2 and 3). Jersey gets 96% of its electricity from France (https://www.jec.co.uk/about-us/our-vision/sustainability/protecting-the-environment).

Guernsey has an interconnection from Jersey called GJ1 (https://www.electricity.gg/electricity/electricity-in-guernsey/importing-electricity/).

Channel Islands shape files may need to be added to the map.

Hi ElectricityMaps Team,

I'm excited to contribute to this project for the first time. I'd like to work on this issue to better understand data parsing and contribute to the project. I've reviewed similar resolved issues and pull requests to grasp the scope and implementation of parsers, connections and setting up config files.

As I understand it, this issue is related to just the configuration files and not creating the parser for it (please correct me if I'm wrong). Is this an appropriate first issue for me to tackle? And is there anything else I should know, excluding the info already provided in the wiki?
