I personally want to remove this "trend" (this is not the only app that does this), but if there are people that like that, then it would be better to just optionally disable this.
Why would you like to do it?
Because I can't be bothered remembering which weekday was the 7th of October or which month day was last Monday. Showing weekday + date is the best of both worlds, so that no one would have to think which day was what.
How would you like to achieve it?
Make it an option (toggle, which is turned on by default to not change the default UI).
P.S. I checked and apparently (at least) Android version tells date ("Month day, year") only for all days. Adding weekday for all days would be a nice addition.

Why would you remove additional date information from the last 7 days? "Today" can be either changed to "Sun, Nov 5, 2023" or something like "Sun, Nov 5, 2023 (today)" (same for "Yesterday").
