Historically, single key shortcuts couldn't be assigned (see #29). This has been fixed in PR #214. However, it seems that the PR overlooked the Print (or PrintScreen) key. It is still not possible to set it to any other command than "Grab the whole screen".
In Gnome, the default behavior of PrtSc is to “Copy an area to clipboard“, and I wish to use the same convention, but I'm unable to.
Steps to Reproduce
Open “Keyboard → Shortcuts“ in System Settings
Go to the “Screenshots” section
Disable the shortcut for “Grab the whole screen”
Try setting “Print” as the shortcut for any command
See that it's impossible to do
The only way to assign “Print” is to click on “Reset to Default” on the “Grab the whole screen” command

If the “Print” key is not assigned, it should be assignable as a single key shortcut.
