Fix default symlink #151

For whatever reason you can't do this in the GitHub UI like in #150 even though it looks like you can. And like a dingus I didn't test that PR locally. This recreates an actual symlink.

Okay, I'm confused. I still seem to be getting a blank wallpaper in Gala with this PR.

Ah, because it's being installed in Deb packaging, not with meson. So this is in fact ready to go and should work as expected.
