Add support for custom version tag #3

OKD v3.11.0 has been officially available since Oct, 11. Would be nice to support this, but rather support this with variables which can be provided on startup.

Correction, supported with OPENSHIFT_RELEASE

I tried to support OKD v3.11.0 days ago, but this version needs more memory and it is hard to bring it up with 3 vms on a 8GB-ram laptop ...

I, once, get this up and running by decreasing cluster size to 2 nodes.

okd 3.11 is a lot heavier, right. we evevn have difficulties with more memory

I will try it once over the weekend with these scripts.
