Enable AuditLog for all models #469

Continuation of https://github.com/elixir-luxembourg/daisy/issues/262
AuditLog feature is impolemented but not switched on for all models.
1) Define which models are going to be tracked 2) Enable AuditLog for those models (by default)
(there might be tricky part with UseRestrictions which are kinda separate model to DD)
