Add environment configuration #128

Moved environment settings to an .env file (see .env.example).
Fixed PostgreSQL healthcheck to work correctly (I was getting errors because the username was taken as a database).
Resolved issue with default credentials not being applied in pgAdmin.

Maybe I should also edit the README to include this environment thing

Thanks for this! Last I checked, QNAP doesn't support ENV files, so this would break compatibility for a large number of users. I'd be happy to merge the other commits though

Okay I see ! Thanks for your fast answer, I will create a new branch with these commits
