Add pkgdown functionality and automation

Generated with usethis. I took the GitHub action from another repo, but probably it's not 100% necessary.

In order to work, this also requires going to Settings > Pages and set:

• Build and deployment: deploy from a branch.
• Choose the branch (typically main / (root)).
