What the user types should be in a different color by default, just how Facebook Messenger, LINE, etc. do it.

This is a matter of taste. The way Circe handles it is in line with a few other IRC programs that actually resemble Circe. You can easily customize circe-my-message-face if you prefer those messages to have a different color.
