pointing to .yaml files fails for instrument="nirc2" #8

The nirc2 controller upgrade in October 2023 required us to have two header keyword dictionaries for NIRC2, one for data before that controller upgrade, and one for after. However, the documentation was never updated to clarify that specifying instrument="nirc2" no longer works.

A temporary fix is to change all the instances of this in the docs. A better and longer-term solution would be to allow instrument="nirc2" again and automatically choose the right configuration based on the observation date.
