Migrate to Node 20 #62

Node 16 will end of life in September 2023. We should test and migrate to Node 18 before then.

I don't have much free time to contribute back, but our fork of Compound was just updated to use Node 18 so this could be useful as a reference for whoever can take on the task: https://bitbucket.org/interpersonal-frequency/design-system/pull-requests/215
