Description

Closes #166
Include here a short description of what behaviour this Pull Request introduces.

Unifies all client side supabase client creation to a singe file and using a singleton principle.
Creates a unified file for the server side creation of the supabase clients and implements it's use in the appropriate places relevant to this PR
Organises the supabase directory and associated utils and models
Changes import statements to reflect new structure
Cleans up any usage of older redundant files and usage
